Reintroducing - DIET

Well, I've been slacking. I haven't been working out much and I have not been that good with my diet. Needless to say, I feel like a giant cow. So I have decided, enough is enough. I am going to get back on the workout wagon and try to start eating better again.  Now, I do not expect to go from 0-60 right away. I am going to be realistic otherwise I'll get sad at myself for failing to reach my goal and I'll devour a whole gallon of ice cream. Which would then, in turn, make me even sadder for REALLY failing my diet.

So, knowing me and knowing how much I love junk food, I am letting myself cheat. Not daily, not all the time. But I know I need to give myself SOME lee-way when it comes to a diet. Otherwise its bad news bears. The diet I am going to attempt to follow 90% of the time (or every day but Sundays, I am not sure yet which I think I can do) is the following:
I think I can do that. Now, in theory, if I give myself one day a week to have some of those things, I think that's a better idea. Because if I decide to let myself have a tiny cheat every so often, I think I'll just end up having junk all the time, probably one piece daily, and that won't work. So one day a week I think is more feasible and more likely to keep me on track. Now, by one day a week I do NOT mean 
What I mean is more like, I AM allowed ice cream, or candy, or maybe a donut, on one particular day. It does NOT mean that all day I eat all the junk that I want. So yeah, I think that's doable. Even though all I want is chicken tenders and sweetarts, I think I can push my cravings aside and do what's best for me. 

Now in regards to working out, I am going to aim for 3 days a week at CrossFit and then 2 walks a week. I know that if I set my sights on working out daily, I'll fail. And this quest is not about setting high goals that I cannot reach. It's about actually making a difference in my body again. So, my 3 days a week at CrossFit and then 2 walks on other days is TOTALLY feasible. Then, when I am up to it, I can go to CrossFit an extra day. But for now, I'll set my sights on three days a week. I think for now this is a good way to get back into everything. Especially since I have kind of been a lazy bum the past two months.

Why I Work Out

Ok. So you may remember my post about lemons and lemony food.  Don't worry. I have not had a change of heart and cheated on my lemons. I do still love all things lemon.  However, I have another obsession. S'mores.  This post will do no good at being a motivator to work out other than the fact that I have gained weight just looking at these recipes.  So without further adieu, the reasons I work out.

2 Weeks In

I am two weeks in to my Beach Body Challenge/CrossFit membership.  So far, I have not felt super sore to where my body hates me. I am not sure if that's because my diet is better so I am recovering faster, or if I am not pushing myself hard enough. Either way, I am a rockstar.


In talking with my coach at CF, we have set a goal time limit of three months. That's when my CrossFit contract ends.  He is convinced I can reach my goal of Jessica Biel's body by then.  Don't remember what her body looks like? Here is a refresher.
Sorry that picture has that awesome logo going through it. You get my point though. I think Jessica Biel has the best body. Not too skinny, athletic, but not "I'm going to rip your head off" muscular.  


Current Standings:

  1. Down 4 pounds
  2. Body fat down 3.3%

Goals:

  1. Long Term - Body fat down below 20%
  2. Long Term - Weight down 30-40 pounds in fat
  3. Short Term - Climb the robe at CF
  4. Short Term - Do a pull up
  5. Short Term - Do push ups off my knees

So far I am feeling good and getting confident that I may be able to stick with my workout.  Even though I am doing CF and kickboxing, here is my workout photo of the day.

Habits

This picture totally describes my normal daily activity.


However, Beach Body Challenge makes it impossible to follow my usual motto of "Eat all the food".


My body is still conditioned to walk into the kitchen, open all the cabinets, and shove all the food in my mouth.  My solution to that habit is to put relatively healthy things in each cabinet.  That way, no matter which cabinet I open, I should be able to grab something healthy.  Raw nuts in the chip cabinet, fruit/veggies in the fridge, special k bars in the snack drawer, etc.  So far it's helping.  Another BIG helper is my fitness pal app.  That little sucker really keeps me from shoving everything that looks tasty down my throat.  I will admit, some days its not as good a helper as it should be (simply because I hide my phone for the day so I won't enter calories).


Today is my double whammy workout. Cross Fit then Kickboxing.  It will be a late night, but hopefully I can do both workouts. My shins are starting to really bother me and I am really hoping it's not another stress fracture.  That would really put me in quite a pickle.

Week 1 Progress Report

One week ago today I signed up for my trial week at Cross Fit.  I liked it a lot, so I decided to sign up for an actual membership.  Somehow I was able to motivate myself to go for 5 days last week.  I also did kickboxing thrice last week.  So that's 8 workouts in 6 days.  Not bad.  I am not as exhausted as I thought I would be.  I am, however, very sore. Driving a standard was very unfortunate for me.  


On Friday, we did a weigh in and a body fat % calculation.  That was a nightmare.  While I have actually lost a little weight, I had no idea my body fat % was so high.  It was actually really embarrassing for me.  But I guess I need to look on the bright side, I know have a starting point to base my BBC (Beach body challenge) progress off of.


Here are my stats so far:
Weight: Down 4 pounds since beginning
BMI: No clue if it's up or down, but I know the number


Goals:
Lose 30-40 pounds (in fat, obviously I'll gain muscle)
Get body fat % down to 20
Be able to finish the Mud Run June 3 (this is a very SOON goal)


I've cracked down on what I am eating as well as working out. I've downloaded the app for My Fitness Pal and I am tracking my workouts and food consumption there.  I actually feel like I have turned it into a little bit of a competition.  I want to beat the calories allotted for the day.  I know that sounds crazy, but I am competitive with my app.


Even though I am doing Cross Fit and Kickboxing as my workouts, I still feel like I need to put an inspirational workout photo in my blog so here it is.

Drunken Gummies

For a bachelorette party I threw, I made drunken gummies as a treat.  They were AMAZING and everyone loved them.  Only downside was that the bachelorette party was outside so by about halfway through the party, the gummies had started melting and turned into a drunken mess.  But besides that, they were a huge hit.


I bought two 3-pound bags of gummy bears. A little overkill, I know. Then i put them in a plastic container that's about 6x9 inches.  I poured the vodka over the gummies to where every single gummy was completely submerged.
It's hard to tell in that picture, but they are, indeed, submerged.  The vodka I used was Pinnacle whipped cream flavor.  My theory behind this was to get little "creamsicle" drunk gummies.  Turns out, that was a MARVELOUS idea.


After the gummies are totally covered, I put them in the fridge to soak for 5 days.  Every day I went in and mixed up the gummies so that the ones on the bottom didn't soak up a lot more liquor than the ones at the top.  I would have hated for some of the gummies to be tipsy and some be wasted.  


The day of the party I just put them in a little boot decoration I picked up to match the theme of the party.  It was a huge success and everyone loved them! I just recommend not making these for an outdoor party. If you do, try to put them on ice.

Day 1 Fail

Well, my motivation didn't last long. Last night I did not do my intended workout.  Instead I went on a hike for an hour.  I know that is better than sitting at home on my badonk and watching TV, but that is definitely not what my blog post said I was going to do last night.  Sadly, my motivation has just not been there to work out hard.  I am, however, determined to get myself to kickboxing tonight.  I have not been in the mood lately for anything high impact or strenuous, but I really need to get myself working out again. Not only is that the only way to get beach body ready, but it's also going to help me feel better all around.


Even though I know my workout for tonight (tentative), I am still going to post a picture of a workout that I think is good. And the good thing about this one is that it doesn't require getting my butt to a gym.  Sometimes leaving the house is the hardest part, so luckily something like this can be done at home. No excuses there then, right?


It's too bad I don't have more followers of my blog. Sadly, I think being held accountable by people via the internet may be the only reason I will work out some days.  Maybe I should post a "before" shot. I bet if my almost bare body is out there for the world to see, I'll be VERY determined to change it.


Speaking of change it, I did lay out for an hour and a half yesterday.  Between that and my hike, that counts as a perfectly decent day one of beach body challenge...yes?

Summer Snuck Up On Me

It's time to get crackalackin on my workouts and diets.  I don't know how it happened, but it's already almost May.  So I think to help motivate me, I'm going to post about workout attire/workouts/anything health related I come across that inspires me. If I am blogging about it, maybe I'll actually do it.


I came across this and liked it because it's easy and fast.  To lose weight my workout doesn't have to be super long and intense. Any activity helps.
I also like this one because it outlines exactly what to do on what days.  I tend to go into a gym and just wander around and look at machines since I can't figure out what to do so this really helps.

Ok, let's see if blogging about working out helps me to actually work out.  Let's count this as day 1 of my summer body challenge.

Apple Pie Bites

I've been really having a sweet tooth lately.  Could be because I gave up candy for lent, could be because I started cracking down on my diet about a week ago...who knows the reason.  Well today I decided to give in to my sweet craving and make some miniature apple pie bites.  They're like apple pies, but in moderation! I guess they're the cupcakes of the pie world.  I adapted the recipe from one I found online.  They are absolutely delicious. The hardest part about this whole recipe is just eating one!



What You Need
  • 1/2 cup sugar ( I used Splenda)
  • 2 teaspoons ground cinnamon
  • 1 package refrigerated pie pastry (by package I mean the entire box, not one roll)
  • 2 tablespoons butter, melted
  • 2 medium tart apples(I used Fuji) – peeled – I cut about 16 slices

What To Do
  1. Combine sugar and cinnamon
  2. Set Aside 1 Tablespoon of the mixture
  3. Unroll Pastry, both rolls, and brush on 1 Tablespoon of Butter and sprinkle sugar mixture.
  4. Place Apple Slices into the bowl with the rest of the sugar mixture – and mix.  You can also put the sugar mixture into a bag with the apples, seal, and shake. Why not workout while you bake?
  5. Cut the pastry into strips — about 1 inch wide and 5 inches long. I got about 8 strips out of each of the two pastries.
  6. Wrap one strip around each apple wedge, placing sugared side of pastry against the apple.
  7. Place “pies” on parchment paper lined baking sheet. (You can grease the parchment to prevent from sticking.)  Brush on the remaining butter and sprinkles with the rest of the sugar mixture.
  8. Bake at 425 for 10 – 13 minutes or till golden brown.
  9. Enjoy!!

Irish Car Bomb Cupcakes

I made Irish Car Bomb Cupcakes for St. Patty's Day.  They turned out AMAZING!  The beer really helped to make the cake very moist.  I mean how could they turn out bad? Irish whiskey, Bailey's, and Guinness? YES PLEASE!  Mind you, these cupcakes are not for kids.  The only alcohol that bakes out is in the cupcake.  The ganache and icing does not bake.  Since I brought these to a party, I made sure to bring a "kid friendly" cupcake as well so that everyone could partake in the deliciousness.  I'll do a post on my other cupcakes at a later time.







Yield: 24 cupcakes
Prep Time: 40 minutes | Bake Time: 17 minutes
For the Cupcakes:
1 cup Guinness stout
1 cup unsalted butter, at room temperature
¾ cup Dutch-process cocoa powder (I used Hershey's dark cocoa)
2 cups all-purpose flour
2 cups granulated sugar
1½ teaspoons baking soda
¾ teaspoons salt
2 eggs
2/3 cup sour cream


For the Whiskey Ganache Filling:
8 ounces bittersweet chocolate
2/3 cup heavy cream
2 tablespoons butter, at room temperature
2 teaspoons Irish whiskey


For the Baileys Frosting:
2 cups unsalted butter, at room temperature
5 cups powdered sugar
6 tablespoons Baileys Irish Cream
1. To Make the Cupcakes: Preheat oven to 350 degrees F. Line 24 cupcake cups with liners. Bring the Guinness and butter to a simmer in a heavy, medium saucepan over medium heat. Add the cocoa powder and whisk until the mixture is smooth. Cool slightly.
2. Whisk the flour, sugar, baking soda and salt in a large bowl to combine. Using an electric mixer, beat the eggs and sour cream on medium speed until combined. Add the Guinness-chocolate mixture to the egg mixture and beat just to combine. Reduce the speed to low, add the flour mixture and beat briefly. Using a rubber spatula, fold the batter until completely combined. Divide the batter among the cupcake liners. Bake until a thin knife inserted into the center comes out clean, about 17-25 minutes. (Mine took closer to 25 to cook, but everybody's oven is different so I recommend starting at 17 and going up from there.) Cool the cupcakes on a rack.
3. To Make the Whiskey Ganache Filling: Finely chop the chocolate and transfer it to a heatproof bowl. Heat the cream until simmering and pour it over the chocolate. Let it sit for one minute and then, using a rubber spatula, stir it from the center outward until smooth. Add the butter and whiskey and stir until combined. Let the ganache cool until thick but still soft enough to be piped.
4. Adding Ganache to Cupcakess: Once the ganache is cool, spread about one teaspoon onto each cupcake.  You can use more or less depending on taste. You can also fill the cupcakes with the ganache by using an icing tip to dig out a hole in the cupcake.  I chose to spread it on top rather than fill it because I like flavors to be evenly distributed in my desserts.  Another easy way would be to just dip the cupcakes in the ganache.  This works if your cupcakes are filled enough to flow over the top just a little.

5. To Make the Baileys Frosting: Using the whisk attachment of a stand mixer, whip the butter on medium-high speed for 5 minutes, scraping the sides of the bowl occasionally. Reduce the speed to medium-low and gradually add the powdered sugar until all of it is incorporated. Add the Baileys, increase the speed to medium-high and whip for another 2 to 3 minutes, until it is light and fluffy.
6. Using your favorite decorating tip, or an offset spatula, frost the cupcakes and decorate with sprinkles, if desired. Store the cupcakes in an airtight container.




I had a lot of fun making these cupcakes.  They were fairly easy, smelled amazing, and tasted great.  I am now motivated to try making cupcakes out of other famous shots.  Perhaps Vegas bomb cupcakes?  That might have to be my next endeavor.

Lingering Over E-Pics

It's been over three months since I got married.  Over 11 months since I got engaged.  So why am I lingering over engagement photo sessions?  The answer is simple. I never really did one.  We were on a tight schedule to get wedding things done since after we got engaged Eric had to leave for school a month later.  That gave us a month, 4 weekends, to get the cake chosen, meet with photographers, and check out venues.  That's not a lot of time.  Hence why we decided to skip out on an engagement session.  We did, however, get my mom to take pictures of us up at their 8 acres of land.  The pictures came out beautiful and served the purpose we needed them for - giving us a good picture for the STD's (save the dates...for you non-bridal people).  

I swoon over the artistic, lovey dovey e-pics.  I love the fun poses, fancy clothes, cute props, and interesting locations.  I love that the pictures take the couple and put them in a different light. The sessions I love the most are ones where the couple look like they were put in a movie and the photos are stills.  The pictures make the couple look so interesting, like people that you really want to get to know.  I love how these photo sessions can add a story to the couple, give them a background that each viewer can interpret for themselves.  Do you not know what I mean?  Well here are some pictures that make me drool.

I could keep posting pictures, but I am sure that eventually you would lose interest if my post became just a photo album.  Or maybe you wouldn't, but I won't risk it.  I love photos that have action, a story behind them, props, basically anything out of the ordinary.  Not to mention that a professional photographer also brings one thing you can't get at home, amazing quality photos.


I know that I can do a session anytime I want. I could technically schedule a photo session just because. However, I feel like photo sessions need to have a reason behind them. They need to be something that represent an important moment in time.  Wedding, engagement, anniversary, etc.  So since I yearn for an artistic, meaningful photo session, I have decided I know when I will do it.  I'm going to get my dream photo session when I am pregnant.  Problem solved.  It will be a time in my life that I will always want to remember, and I can do a really fun session since it won't matter if I ruin my clothes since I won't be wearing them a majority of my life anyway.  Rip a maternity dress? Meh who cares. You only wear it for about four months anyway, no harm.  


Here are some pictures that have influenced me and have proven to me that a maternity photo shoot can be just as artistic and maybe even more loving than an e-pic session.

Oh yes...those are amazing.  I need to be realistic though and realize I'll probably be bigger than all those women combined.  So instead of doing a photo shoot at 7 months, I'll go ahead and do it at five months. Problem solved.  I love those pictures so much. The hard part will be finding a photographer who has great ideas and knows the angles that I would have to be at while I am at the heaviest I'll be in my entire life. But I think it will be totally worth it.  So maybe I should stop swooning over e-pics and focus on one that I will actually be able to have someday, a maternity shoot.  I missed my window for the e-pics, but I'll be sure not to miss my maternity shoot window when it happens.  I cannot wait to someday frame these types of pictures of me, in a nursery perhaps.
